Hi Katie! You certainly do have your work cut out for you. :) But it's neat that you can see the potential. I like taking old things and making them usable again, restoring them. There are lots of great books out there (and websites) on designing for small spaces. It's amazing how much you can fit into places if you keep it simple and organized! Good luck and be sure to show us pics of the in-progress and the finished product!
We have already visited a few sites, don't have any real solid ideas yet. Does anybody know any tips to remove wallpaper?

We had a whole house of wallpaper to remove. We tried everything from steaming to wallpaper stripper. The best results came from just scraping it off, then using warm water and ammonia to wash it down.

I saw your comment on Bridgett's blog and thought I would say and try to keep in touch. We missed you all when you were here. Your kids are getting so big. We pray for you guys often. Good luck fixing up your new apt.
I helped a friend remove some and we used warm soapy water. It didn't just fall off, but it helped a lot.
My mom told me Fabric softner works. We tried it ( I was very surprised to find fabric softner here) I think it might have helped, but I don't know if it might it any easier then warm soapy water would have.
